1. | Preheat oven to 300 Degrees |
2. | In a small bowl, stir together honey, coconut oil and vanilla (you might need to melt the coconut oil depending on the time of the year) |
3. | In a large bowl, stir together oats, salt and cinnamon. |
4. | Combine the oats with the honey mixture |
5. | Spread the mixture in a thin, even layer on a parchment lined baking sheet. |
6. | Bake stirring after 15 minutes, (this is when I will usually thru in nuts, coconut and other items I might want to toast a little) until the granola is a very light brown. It should take 20-30 minutes. You can bake it longer for a crunchier, toastier flavor but be careful not to burn it! |
7. | Cool the granola completely, it will harden as it cools. |
8. | Once your granola's cool get creative! |
9. | Honey nut - Chopped almonds, cashews and pumpkin seeds |
10. | Apple Cinnamon - dried apple, almonds and raisins |
11. | Tropical - Shredded coconut, goji berries and macadamia nuts |
12. | Mixed seeds - Pumpkin seeds, flax seeds, hemp seeds, sunflower seeds |
13. | I tend to do whatever seeds we have (flax, sunflower) a nut, craisins and coconut flakes |
14. | Store in an airtight container and eat within two weeks |
