Apple Oatmeal Muffins - E

INGREDIENTS

1tablespoon oat fiber
1tablespoon coconut flour
1/4cup rolled oats
1/2teaspoon baking powder
1 to 2tablespoon Truvia
1/2teaspoon cinnamon
dash sea salt
1/2teaspoon vanilla
1/3cup egg whites
1/2small apple, cored, peeled, and diced
1tablespoon water (optional ā€“ add if you want a moister muffin)

INSTRUCTIONS

1.Mix all ingredients in a small bowl, then pour into 2 small ramekins (6 oz. size).
2.Bake at 350 degrees for about 20 minutes OR cook in microwave for 1 1/2 to 2 minutes.
3.Makes 1 serving. You can eat the other half of the apple along with your two muffins for a great ā€œEā€ meal!
